So if you need a really good healer, you should defenitely go for cardinal. But this is the thing. Depending on what kind of server you play on, specificaly if it has mana potions or not. If it doesnt then an evasaint would be usefull there. Now a cardinal has the skill called "greater battle heal" wich is ideal for healing. An evasaint doesnt have that skill. So now when it comes to skills from lvl 40 to lvl 76. One major skill for a bishop is "Celestial Shield". That skill can be used on one target making that target temporarily invinsible. That skill has been used on me and i have to say it has saved me alot of times. Now an elven elder has a skill called "recall" wich teleports all the party back to the nearest town, wich can also save you and your party members. However your members need to have summoning crystals for them to be recalled. A bishop has a skill called "purify" wich is very usefull at raids. It Heals paralysis, cures poisoning and stops bleeding. There is also the buffs you should consider if you play in a server where they dont provide buffs with an npc. A bishop is in my opinion better for buffs than an evasaint because a bishop has the skill "acumen" and the skill "berserker spirit". A bishop also has the skill "mass resurrection" wich revives all your ally members around you.
Now for the skills after 76 lvl. Now here the evasaint has a really important buff that a cardinal doesnt. It's called "profecy of water". That buff is ideal for mystic characters. It increases there cast.speed m.att. and some more wich i cant remember:P A Cardinal also has an important buff at these lvl's. Its called 'salvation" that basically if you cast that on a target, when that target dies, will be able to resurect himself at the spot that he died and keep all his buffs. So this is basically the important stuff. Sorry if ive left anything out:P What would help is if you told me a few details about the server you play in like, if there are npc buffers, mana potions, and stuff like that. Then i could really tell you what would probably be best. Hope i helped:P

The essential difference between these 2 characters is in what they regenerate.
Cardinals (aka Bishop/"Bish") regenerate health, and are incredibly good at it. Balance life+body of avatar is an easy way to regenerate the hp of the whole party in a very short period of time. Greater battle heal, and, to a lesser extent, greater heal, are good for raid parties-to keep the tank alive. And, as the final icing on the cake, there is benediction. Although this requires you to have 25% hp, when used, it can fully restore the hp of any character. Thats right, even your titan with +5 CON. This is because it restores something like 200% of their total health...not bad, eh? And if, despite your best efforts, an ally drops, you always have reses on hand, and not only that, they go off at your cast speed (which is one of the highest in the game). Your buffs don't really help much-a prophet or warcryer is best to take that role-unless you happen to come up against undead. Here you will really shine with the various divine defense and offense buffs giving your party a sizeable edge, and you even get to add another nuker with skills such as might of heaven and respose. Against more "human" targets, you will still have the ability to sleep/root/mana burn. Mana burn is one of those skills that dosnt look like much, but on official, it can be a killer, and even in private servers, can cause much annoyance on the recieving end, and hilarity on your end (especially if you have some fighters around to kick ass when the enemy retaliates...).
As for Eva's Saints (aka Elven Elders, "EE"), your pimary restorative skill(s) are(is?) MP-oriented, and for this reason, nukers will love to have you in the party. You *can* act as a secondary healer, but it's best to leave that to the Bishops, whose mana you will be refilling. You have some unique buffs-Prophecy of Water was mentioned above-it increases Mcrit rates-another reason for the nukers to look you up, but there are several others-resist shock for those annoying stun-mobs (oh, and archers...), advanced shield block, making you a great friend of tanks.
Overall, a Bishop is more of a pure healer support class, whereas an Elven Elder is a buffer with a bit of MP support.
